Quick Salmon

A quick dinner of salmon fillets

Preheat oven to 450 degrees.

Rub 8 to 10 oz salmon fillets with just enough olive oil to cover the top and bottom of the fillets. Put on a foil-lined baking sheet skin side down and sprinkle with salt, pepper, fresh minced garlic, dried cilantro and dried parsley to taste. You can add smoked salt, Spanish smoked paprika or Aleppo pepper to the seasonings, if you want a more smoky flavor. Sometimes I also put a few slices of chorizo on top to spice it up.

Roast in 450 degree oven for 8 to 10 minutes, depending on how done you like your fish. Finish with a squeeze of lemon juice.
